Only perfectly ripe cherries are selected before undergoing an extended, carefully controlled fermentation and a very slow drying process. Throughout drying, the cherries are stacked in thicker layers and covered to retain warmth and moisture, allowing fermentation to continue gradually while preserving clarity in the cup.\u003c\/p\u003e\n\u003cp\u003eThe result is a coffee with remarkable sweetness, vibrant fruit character, and a silky body, all while remaining surprisingly clean and elegant.\u003c\/p\u003e\n\u003cp\u003eIn the cup, we find notes of hibiscus, berries, and cane sugar.
