This particular lot is processed using a Mossto Washed method with a blend of varietals. During fermentation, coffee mossto (the juice from coffee cherries) is reintroduced to encourage a more expressive fermentation while preserving the clean profile of a washed coffee.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eThe result is exactly what we look for in a single origin espresso: vibrant notes of apple and orange, supported by a rounded mouthfeel and lingering sweetness.
