El Zafiro is one of the most respected coffee farms in Central America, located in the highlands of Guatemala. Managed by the Keller family, the farm has gained recognition for producing exceptional coffees through meticulous farming, careful varietal selection, and innovative processing methods. The combination of high elevation, volcanic soil, and a cool climate allows the coffees to develop remarkable sweetness and complexity.
This lot features the Wush Wush varietal, a rare variety that traces its origins back to Ethiopia. While often compared to Geisha due to its floral and tea-like qualities, Wush Wush tends to express a more fruit-forward profile with intense aromatics and vibrant acidity. Its rarity and unique cup profile have made it increasingly sought after by coffee enthusiasts and competitors around the world.
The coffee is processed using an Anaerobic Honey method. After harvesting, the cherries undergo controlled anaerobic fermentation before being depulped and dried with a portion of the mucilage still attached to the seed. This process enhances sweetness, texture, and fruit complexity while preserving clarity in the cup.
The result is a coffee that beautifully showcases the character of the Wush Wush varietal, offering an expressive and layered experience with vibrant fruit notes, elegant florals, and a lingering sweetness.
