Finca Deborah has long been one of the most respected names in the world of specialty coffee.
Located high in the mountains of Volcán, Chiriquí, Panama, the farm is renowned for producing exceptional Geisha coffees that have appeared on competition stages around the world. Through meticulous farming and innovative processing, Jamison Savage and his team continue to push the boundaries of what coffee can be.
This lot features their Nirvana process, a Nitro Maceration Natural. During this process, whole coffee cherries are fermented in a sealed environment and infused with nitrogen, creating a controlled fermentation that enhances fruit expression, sweetness, and aromatics while maintaining clarity in the cup.
What fascinates us about this coffee is how expressive it is while still feeling elegant. In the cup, we find notes of strawberry, peach, and delicate florals. Sweet, juicy, and beautifully aromatic, with layers that continue to reveal themselves as the coffee cools.
