Ethiopia Koke Shalaye - Full Washed
Koke Shalaye comes from the highlands of Yirgacheffe, Ethiopia, an area known for producing some of the most expressive and elegant washed coffees in the world. The cherries are sourced from smallholder farmers around the Koke kebele and processed at the local washing station with careful attention to detail.
This lot is processed using the full washed method, where the cherries are depulped, fermented in water, washed clean, and then dried slowly. This process highlights clarity, structure, and the delicate floral qualities Ethiopia is known for.
In the cup, it’s lively and refreshing, with notes of chrysanthemum, Sunkist orange, and yellow peach. Bright, clean, and beautifully aromatic, a cup that feels light yet expressive.
