Ethiopia Siko - Full Washed
Coming from Siko village in Uraga, Guji, this coffee is produced by around 500 smallholder farmers growing coffee at elevations of 2,100–2,250 meters above sea level. The area's high altitude, fertile red soils, and cool growing conditions encourage slower cherry maturation, contributing to the sweetness and elegant character Guji coffees are known for.
The cherries are delivered to Siko Washing Station, established in 2017. After careful selection, the coffee undergoes a traditional washed process, with wet fermentation for 24–72 hours before being washed and density-sorted in water. The parchment is then soaked and slowly dried for around 13 days, helping preserve the clarity and delicate aromatics of the coffee.
In the cup, expect a beautifully clean and elegant profile with notes of sweet pear, juicy stone fruit, and delicate florals. Bright yet gentle, with a refined sweetness and a clean, lingering finish.
