Few coffee farms have shaped the world of specialty coffee quite like Finca Deborah.
Located at over 1,900 meters above sea level in Volcán, Chiriquí, Panama, Finca Deborah is one of the highest Geisha farms in the country. Founded by Jamison Savage, the farm has become known worldwide for its meticulous farming, innovative processing, and numerous international competition successes. Coffees from Finca Deborah have been used on some of the biggest competition stages and continue to be regarded as some of the most sought-after Geishas in the world.
This lot features their Vivid process, a proprietary fermentation method that incorporates elements of carbonic maceration. Whole coffee cherries are fermented in a sealed, oxygen-limited environment, allowing pressure and naturally occurring gases to intensify aromatic compounds and fruit character. The result is a coffee with remarkable clarity, heightened sweetness, and an expressive floral profile while preserving the elegance and transparency Geisha is known for.
What we love most about this coffee is its balance. Despite its intense aromatics, it remains incredibly refined and delicate. In the cup, we find an intense bouquet of jasmine florals, complemented by juicy peach notes and a vibrant orange candy sweetness that lingers beautifully as the coffee cools.
