Finca Milán Sakura
Located in Risaralda, Colombia, Finca Milán has been producing coffee since 1982. Led by Julio César Madrid and Andrés Julio Quiceno, the farm is known for its innovative approach to fermentation, combining years of coffee-growing experience with a passion for exploring new flavors through carefully controlled processing.
Situated at approximately 1,600 meters above sea level, Finca Milán benefits from the mountainous terroir of Colombia's coffee-growing region. Beyond its unique varieties and processing techniques, the farm also places great importance on preserving its natural environment, including native bamboo corridors and natural water springs.
For this special Sakura lot, the team uses an advanced Bio Reactor Washed process, combining selected microbial cultures with carefully controlled fermentation. The coffee is fermented inside a sealed bioreactor under a nitrogen-modified atmosphere, where variables such as temperature, acidity, and sugar concentration are closely monitored. After fermentation, the coffee is washed and carefully dried to develop a more expressive aromatic profile while maintaining clarity and sweetness.
The result is a beautifully expressive coffee with delicate pink floral aromatics, followed by juicy red grapes and a deep, lingering sugarcane sweetness.
