We've been working with Kang Tsani from Kamojang Sixty Percent for several years now, and one of the most rewarding parts of that journey has been witnessing the continuous evolution of his coffees. Each harvest brings new ideas, new experiments, and another step forward in quality.
This year is no different.
One of Kang Tsani's latest projects explores a processing method called Nitro Maceration. Unlike traditional Carbonic Maceration, which uses carbon dioxide (CO₂) to create an oxygen-free environment during fermentation, this process utilizes nitrogen (N₂). Nitrogen is an inert gas that creates a more stable fermentation environment, allowing the coffee to develop vibrant fruit complexity while preserving clarity and elegance in the cup.
The result is a beautifully expressive coffee with pronounced yellow stone fruit characteristics, reminding us of apricot and mandarin orange. Delicate floral notes emerge in the finish, supported by a remarkable sweetness that lingers long after each sip.
A wonderful example of how thoughtful innovation can elevate, rather than overshadow, the character of the coffee itself.
