Sukahurip Coffee - Dark Room Natural
We've had the pleasure of working with Kang Yuda for the past few years, and one thing that has always stood out is his curiosity to keep improving. Based in Sukahurip, West Java, he works closely with local farmers, continuously exploring new processing methods while staying true to the character of the coffee and its terroir.
Earlier this year, Kang Yuda reached out and asked if we'd be interested in trying one of his newest experiments: a Dark Room Natural process. Of course, we couldn't say no.
Unlike a conventional natural process, the cherries are dried in a carefully controlled dark room where temperature, humidity, and airflow remain more stable. This slower and more controlled drying encourages greater sweetness and fruit development while producing a cleaner, more refined cup than many heavily fermented naturals.
The result is exactly what we hoped for: vibrant, fruity, and delightfully funky, yet remarkably clean.
In the cup, expect a lively acidity reminiscent of Sunkist orange and raspberries, complemented by a hint of dark chocolate that brings balance and a lingering sweetness to the finish.
